Crunchy Parmesan sprouts

Turn your sprouts into a tasty teatime snack.

Ingredients

  • 500g leftover cooked Brussels sprouts
  • 25g plain flour, seasoned
  • 1 egg, beaten
  • 50g white breadcrumbs
  • 50g fresh Parmesan, finely grated
  • oil for shallow frying
  • For the dip
  • 200g Morrisons Eat Smart Fromage Frais
  • 30g mature Cheddar cheese, grated
  • spring onions, to garnish

Method

  1. Toss the sprouts lightly in the seasoned flour.
  2. Line up the following: a bowl of beaten egg, a bowl of the breadcrumbs and Parmesan mixed together, and a large clean plate or tray.
  3. Pierce a sprout with a cocktail stick and dip in the beaten egg, then coat with the Parmesan crumbs. Lift onto the plate and remove the stick.
  4. When all the sprouts have been coated, heat enough oil in a large non-stick frying pan to cover the base of the pan. Gently fry the sprouts for 2-3 minutes, in batches, turning frequently until they are crispy. Drain onto absorbent kitchen paper to serve.
  5. Meanwhile, mix together the fromage frais and cheddar cheese for the dip. Top with spring onions.
