Crunchy chicken peanut balls

Serve up these Asian inspired balls as a perfect party snack.

Ingredients

  • 250g cooked leftover chicken
  • 2 tbsp crunchy peanut butter
  • 1 clove of garlic, peeled and crushed
  • ½ tsp Chinese five spice
  • 1 egg, beaten
  • 75g fresh white breadcrumbs
  • Oil for deep frying

Method

  1. Place the chicken in a food processor with the peanut butter, garlic and five spice, egg and 25g of the breadcrumbs. Blitz until well combined then take spoonfuls of the mixture and roll into balls between the palms of your hand.
  2. Heat the oil in a deep-fat fryer or large chip pan to 180°C/ 350°F/Gas 4 and fry the chicken balls in batches for 6 to 7 minutes until cooked through and crunchy. Drain on to absorbent kitchen paper and serve hot.

Cooks Tip
Serve with a simple coriander and fresh tomato salsa. If you’re in a rush, blend chopped fresh coriander into a ready-made tomato salsa.
