Cheese and ham quiche

Delicious when served piping hot with salad.

Ingredients

  • 300g short crust pastry
  • 1 tbsp sunflower oil
  • 1 onion, peeled and finely chopped
  • 100g wafer thin ham ,shredded
  • 100g Cheddar cheese, grated
  • 3 eggs
  • 400ml semi-skimmed milk
  • salt and freshly ground black pepper

Method

  1. Preheat the oven to 400F/200C/Gas 6.
  2. Roll out the pastry on a lightly floured surface and use to line a 23 cm loose bottom fluted flan tin. Prick the base with a fork and chill whilst preparing the filling.
  3. Heat the sunflower oil in a small pan, add the onion and cook over a low heat, stirring, for 5 minutes until softened but not browned.
  4. Scatter over the base of the pastry lined case along with the shredded ham and half the cheese.
  5. Beat the eggs in a bowl with the milk and seasoning, Lift the pastry case onto a baking sheet and carefully pour the egg and milk mixture over the ham onion and cheese. Scatter remaining cheese on top and bake for 15 minutes.
  6. Reduce the oven temperature to 350F/180C/Gas 4 and continue cooking for 20 minutes, until egg mixture is firm to the touch and golden.
  7. Allow to rest for 15 minutes before serving cut into wedges.
