Cinnamon spiced pork and apple casserole

Ingredients

  • 2 tbsp sunflower oil
  • 500g diced Eat Smart pork
  • ¼ tsp ground cinnamon
  • 1 tsp paprika
  • 2 medium sized leeks, trimmed and sliced
  • 2 red skinned eating apples, cored and thickly sliced
  • 200ml apple juice
  • 200ml pork stock (made with a stock cube)
  • Salt and freshly ground black pepper
  • 2 tbsp cornflour

Method

  1. Heat the sunflower oil in a pan, add the diced pork and stir fry for 5 minutes until sealed on all sides. Sprinkle over the cinnamon and paprika and toss well, add the leeks and apple, pour in the apple juice and stock and bring to the boil.
  2. Cover and simmer for 30 minutes until the pork is cooked through. Season to taste.
  3. Mix the cornflour to a paste with a little cold water and whisk into the casserole then cook stirring for a few minutes until the juices thicken a little.
