Dover sole with lemon and black pepper

A simple and delicious summer dish

Ingredients

  • 4 Dover sole, cleaned and gutted (heads removed if desired)
  • 1 lemon, zested and thinly sliced
  • ½ tsp freshly ground black pepper
  • 2 tbsp olive oil

Method

  1. Preheat the oven to 200°C/400°F/Gas 6. Lift the fish onto a baking tray, scatter the lemon zest equally over each one and add the lemon slices. Sprinkle over the black pepper and a little salt.
  2. Drizzle with oil and bake for 20 minutes until cooked through and the fish flakes easily with a fork.
  3. Serve with a fresh salad or vegetables
    of your choice.
