Feta and mint topped lamb leg steaks

In a hurry? These feta and mint topped lamb leg steaks only take minutes.

Ingredients

  • 4 lamb leg steaks
  • Salt and freshly ground black pepper
  • 150g Feta cheese, crumbled
  • 2 tbsp mint jelly
  • 50g fresh white breadcrumbs
  • 1 tbsp olive oil

Method

  1. Preheat the grill to medium. Lift the lamb steaks onto a grill pan, season and grill one side for 10 minutes then turn the steaks over and grill for a further 5 minutes
  2. Whilst the lamb is grilling mix together the feta cheese, mint jelly and breadcrumbs. Once the lamb has finished cooking remove from the grill and divide the feta mixture evenly between the steaks, pressing down a little. Drizzle with olive oil and return to the grill for 5 minutes until the cheese has browned and is beginning to melt and the lamb is cooked through.
