Fish chowder

A creamy chowder to warm your cockles on a winter's day.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, peeled and chopped
  • 1 green pepper, deseeded and diced
  • 1 red pepper, deseeded and diced
  • 400g potatoes, peeled and diced
  • 700ml fish or vegetable stock
  • 100g frozen or canned sweetcorn
  • 350g white fish fillets skinned and diced into bites sized pieces
  • 400ml milk semi-skimmed milk
  • freshly ground black pepper
  • 1 tbsp chopped fresh parsley

Method

  1. Heat the olive oil in a large pan and add the onion, peppers and potatoes, cook stirring for 5 minutes then add the stock and bring to the boil. Cover and cook for 10 minutes.
  2. Add the sweetcorn and fish and stir in the milk and freshly ground black pepper, cover and cook for a further 10 minutes.
  3. Ladle into warmed bowls and sprinkle with chopped fresh parsley to serve.
