Fluffy pancakes

The perfect pancake - just add your favourite topping.

Ingredients

  • 175g plain flour
  • 1 tsp baking powder
  • 25g caster sugar
  • 2 large eggs
  • 200ml plain natural yoghurt
  • 2 tbsp sunflower oil

To serve:
Fruit, ice cream or crispy bacon and maple syrup.

Method

  1. Sift the flour and baking powder into a mixing bowl and stir in the sugar. Make a well in the centre.
  2. Beat together the eggs and yogurt and pour into the well. Beat thoroughly to form a smooth batter.
  3. Heat a little of the oil in a large non-stick frying pan, then drop tablespoonfuls of batter, set well apart, into the pan (plan to cook 3 pancakes at a time).
  4. Cook over a medium heat for 2 minutes, then flip over and cook the other side for 2-3 minutes until golden. Repeat with the remaining batter and serve hot with fruit or ice cream. Alternatively, serve with bacon and maple syrup for a savoury American-style dish.
