Fresh mackerel with Teriyaki sauce

With its silvery blue skin, mackerel has dark flesh which is rich in flavour and meaty in texture.

Ingredients

  • 455g (1lb) fresh mackerel fillets
  • 1 x 150g jar Teriyaki sauce
  • 2.5cm (1”) piece root ginger, finely chopped
  • 2 cloves garlic, crushed

Method

  1. Preheat the grill.
  2. Mix the Teriyaki sauce with the ginger and garlic and spread over the fillets.
  3. Marinade for 30 minutes in the fridge.
  4. Lay the fillets on the grill pan.
  5. Cook the fillets under a moderate heat for 6-8 minutes. Serve with noodles and stir-fried vegetables.
