Gambas Al Ajillo

Ingredients

  • 24 fresh whole prawns
  • 100ml olive oil
  • 3 garlic cloves,peeled and sliced
  • 1 chilli, deseeded and sliced
  • pinch of salt
  • large handful fresh parsley, chopped
  •  25ml white wine
  • ½ lemon, juice only

Method

  1. Remove the heads and shells from the prawns and place these in a pan with the oil. Cook for 20 minutes over a medium heat.
  2. Strain and reserve the prawn-infused oil. Heat this oil in a large pan then add the garlic,chilli, salt, parsley, white wine and peeled prawns.
  3. When the prawns are pink and cooked through, serve with a squeeze of lemon.
