Gammon Steaks with a Speedy Rhubarb Sauce

Tasty, tangy rhubarb gives gammon a fruity twist.

Ingredients

  • 2 tbsp olive oil
  • 1 red onion, peeled and finely chopped
  • 450g rhubarb, trimmed and diced
  • 2 beef tomatoes, skinned and diced
  • 3 tbsp cider vinegar
  • 100g dark brown sugar
  • 6 cloves
  • finely grated zest of 1 orange
  • 4 gammon steaks

Method

  1. Heat the olive oil in a pan and fry the onion and rhubarb for 5 minutes. Add the tomatoes, cider vinegar, sugar, cloves and orange zest. Cover and cook for 15 minutes, stirring from time to time.
  2. Cook the gammon steaks as per the on-pack cooking instructions.
  3. Serve the gammon with a spoonful of rhubarb sauce and green veg, such as French beans.
