Garlic and rosemary lamb

You’ll love our aromatic 100% British roast lamb with rosemary and garlic.

Ingredients

  • 1 leg lamb (average 1.5kg)
  • 4 cloves of garlic, peeled and thinly sliced
  • 1 tbsp dried rosemary
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper
  • Fresh rosemary to garnish

Method

  1. Preheat the oven to 200°C/ 400°F/Gas 6.
  2. Place the lamb on a clean work surface and using a sharp pointed knife, carefully make incisions all over the surface, and push the garlic slices into the slits.
  3. Mix together the rosemary, olive oil and seasoning, and brush over the lamb. Lift into a roasting tin and cook for 30 minutes. Reduce the oven temperature to 180°C/350°F/Gas 4 and continue cooking for 30 minutes per 450g, until cooked through.
  4. 4. Stand for 20 minutes, covered loosely with foil, before carving.
