Garlic roast chicken

This roast chicken at its best

Ingredients

  • 2kg (approx.) chicken
  • 6 cloves garlic, peeled and thinly sliced
  • salt and freshly ground black pepper
  • 1 tbsp sunflower oil
  •  
  • For the vegetables
  • 2kg butternut squash, peeled, deseeded and cut into chunks
  • 3 tbsp olive oil
  • salt and freshly ground black pepper
  • 700g broccoli
  • 25g sunflower seeds
  • finely grated zest of 1 orange

Method

  1. Preheat the oven to 200˚C/400˚F/Gas 6.
  2. Place a trivet into a roasting pan and lift the chicken onto it. Using clean hands, push slivers of the sliced garlic between the skin and flesh of the bird, all around the breast. Season well and rub all over with the sunflower oil. Place the chicken in the preheated oven and roast as per the on-pack cooking instructions.
  3. Toss the squash with the olive oil and a little seasoning and roast with the chicken for the final 35 minutes of cooking time.
  4. About 15 minutes before the chicken is cooked, divide the broccoli into small florets and place into a steamer. Steam for 12 minutes. Meanwhile, place the sunflower seeds on a baking tray in the hot oven with a little oil, until lightly browned. Mix with the broccoli and orange zest just before serving. Serve slices of roast chicken with roasted butternut squash and broccoli.
