Ginger and clementine stuffing

Ingredients

  • 3 tbsp butter
  • 1 tbsp vegetable oil
  • 500g onions, peeled and finely chopped
  • 2 eating apples, peeled, cored and finely chopped
  • 2 clementines, zest only
  • 450g McVitie’s Jamaica Ginger Cake (from 2 cakes)
  • 2 eggs, beaten
  • 250g thin cut streaky bacon

Method

  1. Heat the butter and oil in a large pan. Add the onion and apple and cook until softened. Then add the clementine zest and mix well.
  2. Remove the pan from the heat and set aside to cool. Meanwhile, cut the ginger cake into chunks, add to the onion mixture and mix well, then add the beaten eggs and freshly ground black pepper.
  3. Brush a large loaf tin or ovenproof dish with a little melted butter or oil to prevent sticking. Line the dish with rashers of bacon, then spoon in the stuffing, pushing it down into all the gaps.
  4. Fold over the remaining bacon and refrigerate until ready to cook. Bake the stuffing in a hot oven with your turkey for the last 45 minutes until piping hot
