Greek Yogurt with Roasted Nuts and Honey

Ingredients

  • 100g walnuts
  • 100g shelled unsalted pistachios
  •  50g pine nuts
  • ½ tsp sea salt flakes
  • 5 tbsp runny honey
  • 2 x 500g pots reduced-Fat Greek-style yogurt
  • 2 limes, juice and zest
  • 1 vanilla pod

Method

  1. Preheat the oven to 180°C/350°F/Gas 4. Place the nuts on a non-stick baking tray and roast for 10 minutes or until golden and crisp. Season with the salt and drizzle over 1 tsp of the honey.
  2. Place the yogurt in a bowl then stir in the remaining honey, lime zest and juice.
  3. Using a sharp knife, cut down the middle of the vanilla pod and scrape out the seeds. Add them to the yogurt.
  4. Divide the yogurt mixture into glasses and place in the fridge until ready to serve. Scatter over the roasted nuts just before serving.
