Green rice salad

A crisp and delicately flavoured combination.

Ingredients

  • 150g wholegrain rice
  • 100g frozen edamame beans or peas
  • A handful baby spinach leaves
  • ½ cucumber, diced
  • 1 avocado, peeled, stoned and sliced
  • 10 torn fresh basil leaves
  • 1 tbsp fresh parsley, chopped
  • 4 spring onions, finely chopped
  • 100g mozzarella balls, to serve
  •  
  • For the dressing
  • Juice of 1 lime
  • 2 tbsp olive oil
  • 1 tsp white wine vinegar
  • Freshly ground black pepper

Method

  1. Boil rice in salted boiling water for 20 minutes, adding edamame beans or peas for last 3 minutes. Allow to cool completely.
  2. Stir in the spinach, cucumber, avocado, herbs and spring onions. Mix dressing ingredients together and drizzle over. Serve with slices of mozzarella.
