Halloumi and roasted vegetable skewers

A healthy and sunny meatfree kebab.

Ingredients

  • 500g halloumi cheese, cut into 40 cubes
  • 125g button mushrooms
  • 360g cherry tomatoes
  • 1 pack mixed peppers, deseeded and diced
  • 4 tbsp olive oil
  • 1 tbsp fresh thyme leaves
  • 1 tbsp clear honey
  • finely grated zest and juice of 1 lemon
  • salt and freshly ground black pepper

Method

  1. Preheat the grill. Place the halloumi cubes in a large nonmetallic mixing bowl. Wipe the button mushrooms and add to the halloumi along with the tomatoes and diced peppers.
  2. Mix the olive oil, thyme, honey, lemon zest and juice and a little seasoning together. Drizzle mixture over the cheese and vegetables and toss well.
  3. Randomly thread the halloumi cubes, peppers, mushrooms and cherry tomatoes onto soaked wooden skewers.
  4. Grill for 6 minutes, turning twice, until the vegetables are cooked and the halloumi is beginning to brown. Serve warm.
