Hearty chilli

The hearty home classic. A perfect spicy chilli slowly cooked with 100% British beef.

Ingredients

  • 800g lean minced beef
  • 1 large onion, peeled and fi nely chopped
  • 3 cloves garlic, peeled and crushed
  • 200g carrots, peeled and grated
  • 3 stalks celery, trimmed and fi nely chopped
  • 1 red pepper, deseeded and fi nely chopped
  • 1 green pepper, deseeded and fi nely chopped
  • 1-2 tbsp chilli powder
  • 1 tbsp ground coriander
  • 1 tsp ground cumin
  • 1 tbsp Italian dried mixed herbs
  • 3 tbsp tomato purée
  • 2 x 400g cans chopped tomatoes
  • 400g can red kidney beans, drained and rinsed
  • 500ml Food Fusions Beef Stock
  • salt and freshly ground black pepper
  • 15g plain chocolate (70 per cent), grated
  •  
  • To serve
  • Herbed Rice
  • Home-made Crunchy Slaw
  • floured tortillas, warmed
  •  
  • To garnish
  • Cheddar cheese, grated
  • soured cream
  • avocado, diced
  • fresh parsley, chopped

Method

  1. Heat a large, non-stick pan and fry the mince for 10 minutes, stirring, until browned evenly. Drain any excess fat then add the onion, garlic,
    carrots, celery, red and green pepper, chilli powder, coriander, cumin and mixed herbs. Stir well and cook for 2 minutes.
  2. Add the purée, tomatoes, kidney beans and stock and season well. Stir, bring to the boil then reduce the heat and cook, covered, for 1 hour.
  3. Remove the lid, raise the heat and add the chocolate. Allow to bubble for 20 to 25 minutes, to reduce some of the excess liquid.
  4. Pile the Chilli into serving bowls and allow guests to serve themselves with the Herbed Rice, Crunchy Slaw and garnishes in separate bowls.
