Herb - crusted cod with green bean salad

A lovely light herby fish dish.

Ingredients

  • 1 garlic clove, crushed
  • 100g wholemeal breadcrumbs
  • zest and juice of 1 lemon
  • 2 tbsp olive oil
  • 2 handfuls flat leaf parsley, roughly chopped
  • salt and freshly ground black pepper
  • 4 x 160g fresh cod fillets
  • For the salad:
  • 200g green beans, trimmed, cooked and cooled
  • 250g baby new potatoes, halved, cooked and cooled
  • 250g cherry tomatoes, halved
  • 50g rocket
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 2 tbsp extra virgin olive oil

Method

  1. Preheat the oven to 200°C/400°F/Gas 6. Mix together the
    garlic, breadcrumbs, lemon zest, juice, olive oil and parsley.
    Season well. Top each cod fillet with the mixture, and press
    down gently. Place on a non-stick oven tray and cook for
    25 minutes or until the fish flakes slightly when pressed
    and the crust is golden.
  2. Meanwhile, make the salad by putting the beans, potatoes,
    tomatoes and rocket into a large bowl. Pour the vinegar and
    mustard into a separate bowl and whisk briskly, then add the
    oil slowly, continuing to whisk. Season well.
  3. Pour the dressing over the salad ingredients and mix well
    before serving with the cod.
