Home-made crunchy slaw

A crunchy home-made slaw to cool down a hot, hearty chilli or to enjoy by itself.

Ingredients

  • ½ medium-sized white cabbage, shredded
  • 400g carrots, peeled and grated
  • 2 British eating apples, peeled and grated
  • 6 spring onions, trimmed and sliced
  • 100ml mayonnaise
  • 2 tsp clear honey
  • 1 tbsp wholegrain mustard
  • 3 tbsp crème fraîche

Method

  1. Place the cabbage, carrot, apple and spring onions into a large mixing bowl.
  2. Beat together the mayonnaise, honey, mustard and crème fraîche. Pour over the vegetable mix, stir well to coat evenly and toss thoroughly.
  3. Cover with cling film and chill until needed. Serve with the Hearty Chilli.
