Home-made lemonade

Quench thirsts with this old-fashioned favourite.

Ingredients

  • 6 value lemons
  • 150g granulated sugar
  • 1 litre water
  • To serve:
  • sparkling water

Method

  1. Carefully peel the skin off the lemons, taking care not to take the pith off too as this can be bitter. Place the peel in a large pan.
  2. Squeeze the juice of all 6 lemons and add to the pan with the sugar and water.
  3. Heat gently, stirring until the sugar dissolves, then raise the heat and bring to the boil. Allow to boil fairly rapidly for 10 minutes. Take off the heat and allow to cool.
  4. Strain through a fine mesh sieve and pour into bottles. Seal and store in the fridge until ready to serve, preferably within 24 hours.
  5. To serve, half fill a glass with the home-made lemonade and top with sparkling water and a handful of crushed ice.

COOK'S TIP: Try adding 15g of grated fresh root ginger before cooking and straining
