Home-made stacked beefburgers

A no holds barred burger!

Ingredients

  • 600g lean minced steak or pre-made burger patties of your choice
  • 1 small onion, finely chopped
  • 1 tbsp American-style barbecue seasoning
  • salt and freshly ground black pepper
  • 240g Smoked Streaky Bacon
  • 4 slices Leerdammer cheese, halved
  • 4 burger buns with sesame seeds, halved
  • 4 tbsp mayonnaise
  • 4 leaves iceberg lettuce, washed and shredded
  • 1 beef tomato, washed and sliced
  • 8 whole gherkins, sliced thinly
  • 4 tbsp three pepper and chilli relish
  • 4 pickled green chillies in brine

Method

  1. Up to half a day ahead of cooking time, mix the minced steak, onion and barbecue seasoning, salt and pepper. Shape into 4 burgers, cover and refrigerate to let the flavours mingle. Also, grill the bacon for 5 minutes until golden and crisp then refrigerate.
  2. To cook, preheat the barbecue, griddle or grill to a medium-high heat. Cook the burgers for 10 minutes each side, until cooked through. Stack two pieces of cheese on each burger and remove them from the heat to rest for a few minutes, so the cheese melts. In the meantime, briefly toast the buns and reheat the bacon on the barbecue.
  3. To assemble, spread mayonnaise on the bottom half of the buns, then arrange the lettuce, tomato and gherkin on top. Add the cheese-topped burgers, a couple of slices of bacon and a spoonful of relish, top with the seeded bun halves and serve with a pickled chilli on the side.
