Honey Bee Cakes

Ingredients

  • 110g butter, at room temperature
  • 75g soft light brown sugar
  • 2 tbsp clear honey
  • 2 eggs
  • ½ tsp vanilla extract
  • 150g self-raising flour
  • ½ tsp ground cinnamon
  • ¼ tsp ground ginger
  • ½ tsp baking powder
  • 1 tsp milk
  • For the bees and flowers
  • 200g white ready to roll fondant icing,
  • natural yellow food colouring
  • black writing icing
  • 8 white chocolate buttons
  • hundreds and thousands

Method

  1. Preheat the oven to 180°C/350°F/Gas 4.Line a muffin tin with 8 paper liners.
  2. Beat together the butter, sugar and honey until light and fluffy. In a separate bowl, beat together the eggs and vanilla. Then beat this into the butter mixture (it may look a little curdled but don't worry, it's fine). Place the flour, cinnamon, ginger and baking powder in a sieve. Sift over the butter mixture and fold in with the milk.
  3. Divide the batter between the paper cases and bake for 18-20 minutes, until risen, golden and firm to the touch. Remove from the oven and leave to cool for 10 minutes. Transfer the cakes to a wire rack and leave to cool completely.
  4. To make the bees, add a few drops of yellow food colouring to the icing. Then use the icing to shape the heads and bodies of the bees. Gently squish them together so they stick. Draw stripes and a face on the bees using the writing icing. Cut the chocolate buttons in half and push into the sides for the wings. Cut out flower shapes from the icing. Press hundreds and thousands into the flowers.
