Honey mustard lamb chops with herby potatoes

Ingredients

  • 600g potatoes, peeled and diced
  • 2 tbsp olive oil
  • 15g butter
  • 4 lamb chops
  • 1 tbsp clear honey
  • 1 tbsp sunflower oil
  • 1 tbsp wholegrain mustard
  • 2 tbsp chopped fresh herbs such mint rosemary chives and flat leaf parsley

Method

  1. Bring a pan of lightly salted water to the boil, add the potatoes and cook for 5 minutes then drain well. Heat the oil and butter in a frying pan and add the potatoes then cook, stirring, from time to time for 15 minutes until golden and crispy.
  2. Whilst the potatoes are cooking, preheat the grill to medium. Lift the lamb onto a grill tray and cook both sides for 5 minutes. Mix together the honey, sunflower oil and mustard,  spread a little evenly over all chops, then return to the grill for 5 minutes until the lamb is cooked through.
  3. Toss the mixed herbs into the crispy potatoes and serve with the lamb chops
