Honey and ginger swede

Indulge in some crispy honey coated swede as naughty nibbles.

Ingredients

  • 1 swede
  • 2.5cm root ginger
  • 2 tbsp olive oil
  • 1 tbsp clear honey
  • 2 tbsp ground ginger
  • 2 tbsp sesame seeds

Method

  1. Gas 6.
  2. Peel 1 swede and dice into bite-sized chunks.
  3. Cook in a pan of boiling water for 5 minutes. Drain well.
  4. Peel and grate a 2.5cm piece root ginger.
  5. Return the swede to the pan and toss with the ginger, 2 tbsp olive oil, 1 tbsp clear honey, 2 tsp ground ginger, then season well.
  6. Arrange onto a nonstick baking sheet and roast for 20 to 25 minutes until the swede is golden and tender.
  7. Serve sprinkled with 2 tbsp toasted sesame seeds.
