Hot and spicy prawn cocktails

A spicy twist on a classic.

Ingredients

  • 2 tbsp olive oil
  • 1 red pepper, deseeded and thinly sliced
  • 2 cloves of garlic, peeled and finely chopped
  • 3 x 175g packs raw king prawns
  • 4 tbsp sweet chilli sauce
  • finely grated zest and juice of 1 lime
  • 2 tbsp chopped fresh coriander
  • 2 avocados, peeled, de-stoned and sliced
  • 2 x 70g bags fresh rocket

Method

  1. Heat the oil in a large frying pan and gently cook the red pepper for 2-3 minutes until softened. Add the garlic and prawns and cook for a further 3-4 minutes until the prawns are pink and cooked through.
  2. Stir in the chilli sauce, lime zest and juice and the coriander, stir well, allow the juices to bubble, then remove from the heat.
  3. Toss the avocado slices with the rocket and divide between 8 serving plates.
  4. Divide the prawn mixture between the plates and serve immediately.

Cooks tip: Avocado will turn black if left exposed to the air so prepare this at the last minute. Sprinkle it with lemon juice and cover with cling film, until ready to use.
