Hot smoky cod

Ingredients

  • 1 tbsp each of light and dark soy sauce
  • 2 tbsp dry sherry
  • 1-2 tbsp Organic Runny Honey
  • 2 tsp Chinese five-spice powder
  • 3cm piece of ginger
  • 4 x 140g pieces of cod (skin on)
  • 200ml chicken stock

Method

  1. Mix 1 tbsp each of light and dark soy sauce, 2 tbsp
    dry sherry, 1-2 tbsp Organic Runny Honey, 2 tsp Chinese five-spice powder and a 3cm piece of ginger, peeled and cut into matchsticks.
  2. Place 4 x 140g pieces of cod (skin on) in the marinade, cover and refrigerate for an hour. Heat a sauté pan over a medium heat. Add the fish and marinade. Bring to the boil then add 200ml chicken stock, made from stock cube.
  3. Simmer for 5-8 minutes until the fish is firm and cooked through.
