Indian spiced cabbage

A versatile mid-week supper dish you can vary to suit your taste.

Ingredients

  • 2 tbsp sunflower oil
  • 1 large onion, peeled and chopped
  • 2 cloves garlic, peeled and crushed
  • 1 butternut squash (approx. 700g), peeled and diced
  • 2 tbsp Morrisons Food Fusions Masala Mix
  • 1 tsp cumin seeds
  • 1 tsp ground coriander
  • 70g sultanas
  • 600ml vegetable stock
  • 1 savoy cabbage, finely shredded
  • 2 red chillies, deseeded and finely chopped
  • 50g block coconut, roughly chopped or crumbled

Method

  1. Heat the oil in a large pan and cook the onion, garlic and squash for 5 minutes, until the onion begins to soften. Stir in the Masala Mix, cumin seeds, coriander and sultanas.
  2. Pour the stock over and bring to the boil, cover and cook for 10 minutes.
  3. Add the cabbage and chillies and cook for a further 10 minutes.
  4. Scatter the coconut over and cook, stirring, until it dissolves. Serve as a side dish or with freshly cooked rice as a main course.
