Leek and sage stuffing

Ingredients

  • 1 tbsp olive oil
  • 300g trimmed, finely chopped leeks
  • 1 tbsp chopped sage
  • 200g sausage, skin removed
  • 70g wholemeal breadcrumbs

Method

  1. Preheat the oven to 200°C/ 400°F/Gas 6. Heat 1 tbsp olive oil in a pan and fry 300g trimmed, finely chopped leeks and 1 tbsp chopped sage for 5 mins.
  2. Mix 200g pork sausages, skin removed, and 70g wholemeal breadcrumbs in a bowl. Add the leeks and mix well. Divide and roll into 18 balls. Bake for 20 mins or until cooked through and no pink meat remains.
