Leeks in a potato gratin

Ingredients

  • 500g peeled, sliced potatoes
  • 500g trimmed, sliced leeks
  • 300ml milk
  • 300ml vegetable stock, made from a cube
  • 25g butter

Method

  1. Preheat the oven to 180°C/350°F/Gas 4. Boil 500g peeled, sliced potatoes for 2 mins, add 500g trimmed, sliced leeks. Cook for 2 mins, drain and put in an ovenproof dish.
  2. Mix 300ml milk with 300ml vegetable stock made from a cube and pour over. Dot in 25g butter and cover with parchment. Cook for 30 mins then uncover.
  3. Turn the oven up to 200°C/400°F/Gas 6. Cook for 10 mins until golden.
