Leeks on toast with goat's cheese

Ingredients

  • 200g trimmed, sliced leeks
  • 25g butter
  • 4 slices of granary bread
  • 170g sliced goat's cheese
    To serve
  • redcurrant jelly
  • black pepper

Method

  1. Cook 200g trimmed, sliced leeks in 25g butter for 5 mins in a covered pan. Meanwhile, lightly toast 4 slices of granary bread under a medium grill.
  2. Top each piece of toast with a spoonful of cooked leeks then divide 170g sliced goat’s cheese between each serving. Return to the grill for 2 mins until the cheese just begins to melt.
  3. Serve each toast with 1 tsp redcurrant jelly and black pepper.
