Leeks with cumin and orange

Ingredients

  • 2 tsbp sunflower
  • 700g trimmed, sliced leeks
  • 1 tsp cumin seeds
  • finely grated zest and jusice of 1 orange
  • Black pepper

Method

  1. Heat 2 tbsp sunflower oil in a large non-stick frying pan or wok and add 700g trimmed, sliced leeks. Cover the pan with a tight-fitting lid and cook for 5 mins until slightly softened.
  2. Remove the lid and toss in 1 tsp cumin seeds, the finely grated zest and juice of 1 orange and cook for a further 5 mins until piping hot.
  3. Season to taste with freshly ground black pepper and serve immediately.
