Lemon Sole

Ingredients

  • 4 lemon sole, cleaned
  • 1 lemon
  • 20g butter
  • salt and freshly ground black pepper

Salsa:

  • 2 ripe vine tomatoes, deseeded and finely chopped
  • 1 peach, skinned and finely chopped
  • 2 tbsp tomato ketchup
  • 1 tsp honey

Method

  1. Lay 4 sheets of foil onto a clean surface and top each with a sheet of baking parchment. Place a piece of lemon sole on each one.
  2. Squeeze a little lemon juice over each one, dot with a little butter and season with a little salt and black pepper. Wrap up tightly and cook on a BBQ for 12 to 15 minutes until fish is cooked through and flakes easily with a fork.(Alternatively you can cook in the oven at 400F/200C/Gas 6.)
  3. To make the salsa, mix together the chopped tomatoes, peach and cucumber with the ketchup and honey. Serve with the cooked lemon sole.

Cooks Tip: To skin a peach, place it in a small bowl of boiling water, leave for two minutes, then transfer to cold water. The skin will peel away with ease.
