Lemon Souffle

A light and delicate pud to satisfy your taste buds.

Ingredients

  • 3 lemons, zest and juice
  • 75g caster sugar
  • 300g Morrisons Eat Smart Reduced Fat Soft Cheese
  • 11g sachet gelatine
  • 200ml reduced fat crème fraîche
  • 300ml evaporated milk
    To decorate
  • lemon zest, dipped in caster sugar

Method

  1. Wrap baking parchment around six ramekins to form a collar 5cm above the top. Secure with string.
  2. In a bowl, whisk the lemon zest and juice with the caster sugar and soft cheese until smooth.
  3. Mix the gelatine with 4 tbsp cold water. Stand for 5 minutes until spongy. Heat over a pan of simmering water until dissolved. Whisk into the soft cheese with the crème fraîche. Chill for 1 hour until almost set.
  4. Heat the evaporated milk in a bowl over a pan of simmering water. Whisk for 10 minutes until frothy. Fold into the lemon mix then spoon into the ramekins, filling to 3cm above the rim into the collar. Chill for at least 4 hours, until set.
  5. To serve, carefully remove the collar and smooth with a warmed, damp knife. Decorate with sugared lemon zest
