Lime and coriander chargrilled chicken

Chicken will never be bland again with this fresh and fruity marinade.

Ingredients

  • 2 tbsp sunflower oil
  • finely grated zest and juice of 2 limes
  • 200g pouch Morrisons Food Fusions Mango Sauce
  • 25g block coconut, grated
  • 5cm piece fresh ginger, peeled and grated
  • 4 tbsp fresh coriander, chopped
  • 3 x 400g packs mini chicken fillets

Method

  1. Soak 16 wooden skewers in warm water.
  2. Place the sunflower oil, lime zest and juice, mango sauce, grated coconut, ginger and coriander into a large non-metallic bowl.
  3. Mix together well then toss the mini chicken fillets in the marinade, cover and leave in the fridge for 1 hour.
  4. Thread the chicken onto the soaked skewers and dispose of the remaining marinade. Barbeque for 8 to 10 minutes, turning frequently until cooked through.
