Mackerel on Toasted Ciabatta

Ingredients

  • 1 ciabatta loaf
  • 2 tbsp olive oil
  • 4 fresh mackerel fillets
  • 70g bag of fresh rocket
  • 100g crème fraiche
  • 2 tbsp creamed horseradish
  • 4 tbsp red onion chutney

Method

  1. Slice 1 ciabatta loaf in half horizontally then cut down the centre to make 4 pieces. Drizzle with 2 tbsp olive oil and grill until golden.
  2. Grill 4 fresh mackerel fillets for 6-8 mins until the fish flakes easily.
  3. Divide a 70g bag of fresh rocket between the toasted ciabatta slices and top with the cooked mackerel.
  4. Mix 100g crème fraiche with 2 tbsp creamed horseradish and drizzle over the mackerel.
  5. Top each with 1 tbsp red onion chutney.
