Mackerel with ginger and sesame

Rustle up a tasty midweek meal with mackerel.

Ingredients

  • 4 fresh whole Cornish mackerel, cleaned and heads removed
  • 5cm piece root ginger, peeled and finely chopped
  • 1 red chilli, deseeded and finely chopped
  • 2 tbsp reduced-salt soy sauce
  • 2 tsp sesame oil
  • 1 bunch spring onions, trimmed and shredded
  • 15g sesame seeds

Method

  1. Preheat the oven to 180°C/350°F/Gas 4. Line a baking tray with non-stick baking parchment and lift the fish onto it.
  2. Mix together the ginger, chilli, soy sauce, sesame oil and spring onions and stuff into the belly cavity of each fish.
  3. Sprinkle the sesame seeds over and bake for 20-25 minutes depending on the size of the fish.
  4. To test if they are cooked, the flesh should flake easily and come away from the back bone.

Cook’s tip: Serve with rice or noodles – allow 50g uncooked weight per person and toss with a little fresh chopped coriander, if desired.
