Meat free chilli con carne

Try a tasty, spicy vegetarian chilli to warm fire-up tastebuds.

Ingredients

  • 1 large onion, diced
  • 2 cloves of garlic, crushed
  • 1 fresh chilli, seeds removed and finely chopped
  • 1 green pepper, seeds removed and diced
  • 400g pack of meat free mince
  • 400g can of red kidney beans, drained and rinsed
  • 400g can of tomatoes
  • 300ml water
  • 2 tbsp tomato puree
  • 1 tsp ground cumin 
  • 1 tbsp chilli powder (optional)
  • To serve
  • Basmati rice
  • Wild rice
  • Sour cream

Method

  1. Fry the chopped onion, garlic, green pepper and fresh chilli until soft.
  2. Add the meat free mince, kidney beans, cumin, tomato puree, tinned tomatoes and water and bring to a steady simmer for 30 minutes. If you like the chilli hotter then add some chilli powder, a little at a time, to taste. 
  3. Serve with basmati and wild rice and a little sour cream.
