Meat loaf with a tomato sauce

Treat the family to a more-ish meat loaf with tomato sauce.

Ingredients

  • 4 sausages
  • 400g extra lean minced beef
  • 2 onions, finely chopped
  • 1 egg, beaten
  • 3 tbsp tomato ketchup
  • 6tbsp fresh white breadcrumbs
  • 1 large carrot, peeled and grated
  • 1 tbsp olive oil
  • 1 clove garlic, crushed
  • large pinch of chilli flakes
  • 1 level tsp each ground coriander, ground cumin
  • 1 tbsp tomato puree
  • two 400g cans chopped tomatoes
  • salt and ground black pepper
  • Steamed broccoli and pasta, to serve

Method

  1. Using a sharp knife make a lengthways cut in the skin of the sausage. Remove the meat and discard the skins. Place the sausage meat, mince, half the onion, egg, ketchup, breadcrumbs and carrots and seasoning in a large bowl and mix well.
  2. Spoon the mixture into a 2lb loaf tin and cook at 200C/400F/mark 6 for 45 minutes.
  3. To make the sauce heat 1tbsp oil in large saucepan, add the onion, garlic and spices and cook for 5 minutes or until onions are soft.
  4. Add the tomatoes, tomato puree and seasoning to taste, bring to the boil, then simmer for about 30 minutes or until the sauce is reduced by about half.
  5. Serve the sauce with the meat loaf on steamed broccoli and pasta.
