Meatballs

Ingredients

  • 400g mince beef
  • 1 onion, peeled and finely chopped
  • 1 carrot, peeled and grated
  • 75g breadcrumbs
  • 1 tsp dried mixed herbs
  • 1 egg, beaten
  • 1 tbsp olive oil
  • 400g can chopped tomatoes with garlic
  • 2 tbsp tomato puree
  • 300g spaghetti

Method

  1. Place the minced beef into a large mixing bowl and add the onion, carrot, breadcrumbs, mixed herbs and beaten egg. Mix thoroughly to evenly combine all the ingredients then divide the mixture into 20. Roll into balls between the palms of your hands.
  2. Heat the olive oil in a non-stick frying pan and add the meatballs, cook over a high heat until evenly browned on all sides. Add the chopped tomatoes, tomato puree and 150ml boiling water. Stir gently and bring to the boil, then reduce the heat and simmer for 25 minutes until the meatballs are cooked through.
  3. When you are ready to serve, bring a pan of lightly salted water to the boil and cook the spaghetti as per the on-pack cooking instructions. Drain and divide between 4 serving plates.
  4. Top with 5 meatballs and some of the sauce.
