Meatloaf

A little fresh mince goes a long way

Ingredients

  • 4 mixed peppers, deseeded and chopped
  • 2 onions, peeled and chopped
  • 1 tbsp sunflower oil
  • 400g minced beef (½ x 800g pack)
  • 220g can baked beans
  • 1 tbsp mixed herbs
  • 1 egg
  • 3 slices white bread, blitzed into crumbs

    To serve
  • 750g potatoes, boiled and mashed

Method

  1. Preheat the oven to 200°C/400°F/Gas 6. Spread the peppers and one onion out on a baking sheet, drizzle with oil and set aside.
  2. Mix the other onion and the remaining ingredients in a bowl and spoon into a loaf tin, then cover with baking parchment.
  3. Place the meatloaf and peppers in the oven for 25 minutes until the meatloaf is cooked and no pink meat remains.
  4. Serve cut into slices, with the roasted peppers and mashed potato.
