Mediterranean chicken and salsa relish

A great addition to your barbeque repetoire.

Ingredients

  • 4 skinless chicken breast fillets
  • salt and freshly ground black pepper
  • juice and grated zest of 2 lemons
  • 2 tbsp olive oil
  • 4 tbsp of washed and finely chopped chives
  • 3 medium tomatoes, washed and chopped
  • 2 tbsp Italian sun-dried tomato paste
  • 1 shallot, finely chopped
  • 1 clove garlic, finely chopped
  • 2 tbsp extra virgin olive oil

Method

  1. Slice the chicken fillets in half horizontally and spread out in a large glass dish. Season well and pour over the lemon juice, olive oil and half the chives. Cover and refrigerate for 30 minutes.
  2. Meanwhile, make the relish by mixing the lemon zest and remaining chives with the tomatoes, tomato paste, shallot, garlic and extra virgin olive oil. Season well and set aside to let the flavours mingle.
  3. Preheat the barbecue, griddle or grill to medium high. Take the chicken, discard the marinade and cook for 5 minutes on one side, then turn and cook for a further 3 minutes. Check that it's cooked through by cutting into the middle of one piece; if not, cook for a further few minutes until cooked through. Serve immediately with the salsa relish.
