Melt-in-the-middle cabbage balls

Veggie treats to make your mouth water.

Ingredients

  • 300g savoy cabbage, thinly shredded
  • 1 bunch spring onions, trimmed and shredded
  • 800g cooked leftover mashed potato
  • salt and freshly ground black pepper
  • 1 pack Galbani Santa Lucia Mini Mozzarella Balls, drained
  • 2 eggs, lightly beaten
  • 100g white breadcrumbs
  • oil for deep frying

Method

  1. Cook the cabbage for 5 minutes in lightly salted boiling water. Add spring onions and cook for another 2 minutes; drain thoroughly.
  2. Place the mashed potato into a large mixing bowl and add the cooked cabbage and spring onions, season and mix thoroughly.
  3. On a large tray, divide the mixture into 20 equal pieces, then take a Mozzarella Ball and shape a piece of the cabbage mash around the ball, enclosing it totally. Repeat with all the balls then chill for an hour.
  4. Preheat the oil in a deep fat fryer or a large chip pan to 190°C. Have a plate lined with a double layer of absorbent kitchen paper ready to drain the balls onto.
  5. Dip each ball into beaten egg then coat in the breadcrumbs and cook in batches (about 5 at a time) for 5-6 minutes, until golden brown and crispy. Drain onto the paper and serve.
