Mid-week paella

A sizzling solution for your leftover chicken.

Ingredients

  • 250g easy-cook white rice
  • ½ tsp turmeric
  • 1 vegetable or fsh stock cube
  • 900ml water
  • 1 onion, peeled and chopped
  • 1 red pepper, deseeded and diced
  • 100g frozen peas
  • 180g chicken (leftover from a cooked chicken), torn into bite-sized pieces
  • 156g Morrisons Seafood Selection

Method

  1. Place the rice in a large pan with the turmeric. 
  2. Crumble in the stock cube and add the water. bring to the boil, stirring.
  3. Add the onion and pepper. Cover the pan and cook for 10 minutes until most of the liquid has been absorbed.
  4. Toss in the frozen peas and chicken, stir well and cook covered for a further 10 minutes.
  5. Remove the lid and add the Seafood Selection, remembering to remove any paper from the crab sticks and tear into shreds.
  6. Toss well, heat through for 5 minutes and serve.
