Minty Lamb pittas

A great tasting Mediterranean meal and super quick to make.

Ingredients

  • 300g left over cooked lamb
  • finely grated zest and juice of 1 lime
  • 3 tbsp fresh mint, chopped
  • 5 tbsp natural yogurt
  • ½ cucumber, diced
  • 2 vine tomotoes , deseeded and diced
  • 2 little gem lettuce, shredded
  • 4 warmed pitta breads, split

 

Method

  1. Dice the lamb into small cubes and place in a mixing bowl with the lime zest and juice, oil, mint and yogurt, toss well then mix in the cucumber and tomatoes.
  2. Use some of the shredded little gem to half fill each pitta then fill up with the lamb and salad mixture.
