Pan-fried Cauliflower with sun-blush tomato butter

A gorgeous combination of cauliflower and sun-blush tomatoes.

Ingredients

  • 1 medium cauliflower
  • 50g butter
  • 2 cloves of garlic
  • 50g pine nuts
  • 100g sun-blush tomatoes
  • basil

Method

  1. Trim a medium-sized cauliflower and divide into small florets and rinse.
  2. Heat 50g butter in a non-stick pan, add the cauliflower, 2 cloves garlic, peeled and sliced, 50g pine nuts and 100g sun-blush tomatoes, finely chopped.
  3. Cover pan and cook over a low heat for 10 minutes.
  4. Raise the heat and stir-fry for a further 2 to 3 minutes until golden.
  5. Top with a handful of fresh, torn basil leaves to serve.
