Pea, potato and bacon tortilla

Looking for a simple recipe to serve up this summer? This rustic Spanish classic makes the perfect family meal.

Ingredients

  • 150g lean back bacon
  • 300g fresh peas, podded
  • 300g potatoes, peeled and cut into small cubes
  • 1 tbsp olive oil
  • 1 large onion, peeled and chopped
  • 5 eggs
  • 5 tbsp milk
  • 1 tbsp dried tarragon
  • freshly ground black pepper

Method

  1. Preheat the oven to 180°C/350°F/Gas 4. Lightly grease a 20 x 30cm tin with a little oil.
  2. Grill the bacon until just crispy, then drain onto absorbent kitchen paper. When cool, snip into small pieces.
  3. Cook the peas and potatoes in a pan of lightly salted water for 6-8 minutes, until just tender, drain well. Heat the olive oil in a small pan and fry the onion until softened but not browned. Add the cooked bacon, peas and potatoes and toss well, arrange over the base of the oiled tin.
  4. Beat together the eggs, milk and tarragon. Season with a little freshly ground black pepper and pour over the bacon and vegetables. Cook in the preheated oven for 30 minutes until the egg has set. Remove from the oven and allow to cool in the tin for 20 minutes.
  5. Carefully cut into 24 squares and arrange onto a serving plate.
