Perfect cauliflower cheese

Marry together some beautifully creamy mascarpone with fresh cauliflower.

Ingredients

  • 1 cauliflower
  • 25g butter
  • 25g plain flour
  • 300ml full-fat milk
  • 1 tsp English mustard
  • 250g mascarpone
  • 150g grated Cheddar

Method

  1. Trim a cauliflower and divide into florets. Rinse, boil for 10 minutes, then drain well.
  2. Melt 25g butter in a non-stick pan and stir in25g plain flour, then whisk in 300ml full-fat milk and 1 tsp English mustard. Stir until it thickens, then add 250g tub mascarpone and 100g grated Cheddar.
  3. Place cauliflower in an ovenproof dish with the cheese sauce and top with 50g grated Cheddar, then place under the grill until the cheese melts and serve.
