Purple sprouting broccoli with poached egg and bacon

Ingredients

  • 500g purple sprouting broccoli
  • 140g bacon lardons
  • ciabatta loaf
  • 4 eggs
  • olive oil

Method

  1. Preheat the oven to 200ºC/400ºF/Gas 6. Plunge the purple sprouting broccoli in boiling water for 2 mins then refresh under cold running water and drain.
  2. Fry the bacon lardons in a large pan for 10 mins, until crispy and the fat has melted. Toss in the broccoli and heat through. Meanwhile, in a bowl, mix half the ciabatta loaf, torn into small pieces, with 4 tbsp olive oil.
  3. Spread on a baking tray and bake for 10 mins, until pale gold and crunchy.
  4. Crack the eggs into simmering water and poach for 3 mins, or until cooked to your liking.
  5. Serve each portion of broccoli topped with a poached egg and scattered with the croutons.
