Roasted Vegetable and Mozzarella Pasta Bake

Cheesy and packed full of veg, this is the perfect mid-week meal. Create this simple and delicious dish with our brilliant value M Savers products.

Ingredients

  • 1 pack pasta twists (use 200g)
  • 175g onion
  • 330g peppers
  • 150g courgette
  • 250g mushrooms
  • 1 tin chopped tomatoes
  • 1 packet mozzarella
  • dried mixed herbs
  • pesto

Method

  1. Chop the vegetables into approximately 1cm dice. Fry in a little oil for three to four minutes. Add the dried herbs, chopped tomatoes and pesto.
  2. Cook the pasta twists in boiling water until tender. Drain well, mix with the vegetable and tomato sauce and place in an ovenproof casserole dish. Chop the mozzarella into small pieces and sprinkle evenly over the pasta.
  3. Bake in a pre-heated oven at 175° for 20 minutes.
